Not only is this IPA packed with citrus forward hops like \u003cspan\u003e\u003cstrong\u003eMotueka\u003c\/strong\u003e\u003c\/span\u003e, \u003cspan\u003e\u003cstrong\u003eCitra\u003c\/strong\u003e \u003c\/span\u003eand \u003cspan\u003e\u003cstrong\u003eMosaic\u003c\/strong\u003e\u003c\/span\u003e, it also has a special yeast coming all the way from Japan, \u003cstrong\u003eSake Yeast 701\u003c\/strong\u003e! Traditionally used in Sake brewing, this yeast strain is a strong fermenter and gives aromas of \u003cu\u003ebubble-gum with a subtle fruitiness\u003c\/u\u003e. To add an extra dimension to the citrus profile of the beer, we included a touch of \u003cspan\u003e\u003cstrong\u003eYuzu Concentrate\u003c\/strong\u003e\u003c\/span\u003e with the dry-hop addition. Expect aromas of l\u003cu\u003eemon, yuzu, and stone-fruit, with subtle fruitiness and bubble-gum \u003c\/u\u003efrom the Sake yeast. The grist bill is relatively light, including \u003cu\u003ePale Ale Malt, Pilsner Pure Local, Wheat Malt and Rice Flakes\u003c\/u\u003e, for a drinkable beer with a subtle sweet background.
